Chef Shiro Kashiba is the owner and executive chef of Hayama Restaurant. He is a renowned sushi chef with over 50 years of experience, having trained in Tokyo and Seattle. Kashiba was one of the first chefs to introduce sushi to the Seattle area and is credited with helping to popularize the cuisine in the Pacific Northwest.

Hayama Restaurant's menu features a variety of sushi rolls, sashimi, and traditional Japanese dishes such as tempura, teriyaki, and udon noodles. The restaurant is also known for its omakase, a chef's choice tasting menu that showcases the freshest and most seasonal ingredients available. The atmosphere is elegant and cozy, with a traditional Japanese decor and seating arrangements.
